Plant based homemade Buddha Bowl

A delicious high protein plant based home made Buddha Bowl ideal for lunch or dinner. Buckwheat is like a super food, packed with lots of nutritional benefits like protein, fibre and magnesium. It is also very filling, making meals substantial. It cooks very quickly and can be used in diverse ways.
This bowl has so many nutritional benefits and plenty of greens for antioxidants, vitamins and minerals. The use of the different spices gives this bowl a fragrant flavour and helps with digestion.

Plant based buddha bowl

Ingredients:
​1 standard mug of cooked buckwheat
Handful of kale
6 cherry tomatoes (diced)
1/2 medium sized cucumber (diced)
1/2 avocado
1 carrot (steamed)
4-5 Broccoli heads (steamed)
1 spring onion (diced)
1 tbsp of pine nuts
1/2 fresh lime
Olive oil (or any cooking oil of your choice

Spices:
2 fresh garlic heads (grated)
1 tbsp Coriander seeds
Fresh Ginger (grated)
Himalayan salt
Fresh dill

To cook the kale:

  1. Cut the kale leaves in half.
  2. In a small pan heated with olive oil, add the Coriander seeds, the spring onion, ginger and the garlic. Let them cook for about 1-2minutes.
  3. Add the kale leaves and stir everything together. Add pine nuts and let them cook for a few more minutes together.

To serve:
Add all the ingredients in a bowl and sprinkle with fresh dill. Top with some olive oil and fresh lime juice.
