Quick and easy vegan walnut cacao cookies recipe

Treat yourself to some sweetness with these vegan walnut cacao cookies ready in just 15 minutes!

These cookies are simply incredible! They are vegan, gluten-free and have no added or refined sugar. This is a quick and easy recipe, ready in 15 minutes.

They can actually be either baked or chilled. They don’t really need baking, but I love the texture and melting taste of all the ingredients together fresh out of the oven. So if you are not in the mood to bake, you can easily make the dough, make them into cookie shape and chill for about an hour.

Ingredients: (Made 11 cookies)
3 Tbsp grinded walnuts
2 tbsp raw cacao
1 1/2 tbsp cinnamon
1 tsp cardamon
3-5 dehydrated apricots
2 tbsp raisins
60 ml hot water
1 1/2 tbsp cocoa butter
1 tbsp desiccated coconut

Vegan walnut cookies

Preparation:

  1. Add all the ingredients in a bowl and mix everything well together.
  2. Add the hot water gradually. First add all the ingredients (minus the cocoa butter) and add half the amount if water.
  3. Mix everything together.
  4. Add the melted cocoa butter.
  5. At the end, add the remaining hot water and mix well together until it forms the dough.
  6. Make small balls from the dough and line them on baking paper in a baking tray.
  7. Then with the bottom of a small/medium sized glass, press the balls to create the cookie shape.
  8. Bake for 10 minutes at 150C.
  9. Serve and enjoy.
