Delicious and easy to make vegan banana and oats bread

This recipe is so delicious and easy to make. It’s vegan, gluten-free (I used organic, gluten-free oats) and it has no added or refined sugar. It makes the perfect breakfast delight but it’s great for anytime of the day. The ingredients are super nutritious and you probably already have most of them in your pantry.

In this recipe, I used mashed berries as a toping which makes it a decadent, dessert like experience. The juice from the berries gets absorbed in the bread and the taste is just incredible. You can also use nut butters or just have it as it is. 

Ingredients:

300g oats (I used organic gluten-free ones) 

Approx 400ml hot water (see the preparation)

5-6 large dates (soaked; I soak mine overnight)

2 medium size ripe bananas

1 tbs cinnamon powder

1 tbs cardamom powder

2 tbs flaxseed powder

1 tbs chia seeds

1 tbsp goji berries (optional)

Small handful of walnuts (grinned or broken into small pieces for topping, optional)

1 cup of berries (optional, for the topping) 

Preparation:

  1. In a medium sized bowl, mash two medium ripe bananas. I just used a fork to do so.
  2. Drain the dates from the water and mash them gently until they are like a paste then add them into the bowl with the mashed bananas. (Keep some of the water you soaked the dates in).
  3. Add the cinnamon and cardamom powder and stir well together.
  4. Add a small amount (2-3tbs) of the dates syrup water (the water you soaked the dates in).
  5. Add the chia seeds, flaxseeds and the goji berries and again stir well together.
  6. Add the oats and mix all ingredients together then add half of the amount of hot water and stir everything together. And gradually keep adding more water until it has a nice and creamy consistency (make sure it’s not too mushy/watery).
  7. Add the mixture in a rectangular cake mold and sprinkle the grinned walnuts on top. 
  8. Place it in the over at 170° C for about 15/20 minutes (check it to make sure the top is not burnt).

Once it is baked and ready, leave it to cool for about 15 minutes. Serve with the mashed berries or any other topping you prefer. Store the left over in the fridge. I had a slice the next day with Tahini and it was so delicious.
